Bisquick cookies

This may be the easiest chocolate chip cookie recipe of all time.
And they're not too bad in the taste (and looks!) department either!
Secret ingredient?
Crispy on the outside, delicate and soft on the inside.
Not to mention they hold their puffy little shape beautifully!

Here's what you need:

1/2 c butter, softened
1 c brown sugar, packed
2 tsp vanilla
1 egg
2 3/4 c Bisquick baking mix (I used reduced fat)
1 c (6 oz) semi-sweet chocolate chips
1/2 c nuts, toasted & chopped (I used walnuts), optional

(I'm guessing you have all of the above in your pantry right now.)

Here's what you do:

Heat oven to 375 degrees.
In large bowl, mix butter, sugar, vanilla, and egg.
Stir in Bisquick, chocolate chips, and nuts.
(Dough will be a little on the dry side.)

Drop dough by rounded tablespoonfuls onto ungreased cookie sheet,
about 2 inches apart; flatten slightly.

Bake 8-10 minutes or until golden brown.
Remove from cookie sheet to cooling rack.

Pour yourself a tall glass of cold milk and consume at own pace.

P.S.  First foodie photos with the new camera.
A far cry from the shoddy phone pics, eh??
