A touch of fur

It's still winter.
Which means it's still freezing.
Why not embrace it with a touch of fur?

Two of my favorite looks...

Paired with red lips, b+w stripes, & baubles:

Paired with navy nails, a soul-warming cocktail, and colored jeans:

Don't worry.
You can go the faux route.
No animals harmed!
And way easier on the wallet.

Win-win.

Plaid is rad

Winter is "the" time to clad yourself in plaid.

The flannel-y pattern is no stranger to this blog,
but here are a few more of my favorite plaid looks...

Paired with boots and sweaters and leathery accessories.
Ahhhh.
Can you dig?

Cozy up to the fire

With temps currently at a record low this season,
all I can think about is wrapping myself in a blanket, grabbing a hot cup of cocoa, and snuggling with my two loves in front of a crackling fire.

We don't actually have a fire place,
so these lovely pieces of architectural porn will have to suffice!

Happy New Year!

I hope 2012 was good to you,
and that 2013 is only better!

We were {HERE} last year,
but I couldn't be more happy with where I am ringing in the New Year today...

Champs in my PJ's on the couch watching the ball drop.
(Um, can we just take a moment to recognize how old and strung out Jenny McCarthy looked?? Eeek. What happened?)

And a Rose Bowl from home this year,
complete with a living room tailgate,
including a Walsh family holiday classic  - homemade Tom & Jerry's!

(I will admit, I'm actually kind of excited to see the parade, etc. this year, although that sweet California sun sure would be nice, too.)

(sigh)

Happy New Year, m'loves!

Any exciting plans, readers?

Merry Christmas Eve!

Today's checklist:

* Turn on Pandora's "Sufjan Stevens Holiday" station.

* Wear a cozy sweater + pajamas all day.

* Drink lots of Tom & Jerry's and/or mint hot chocolate.
(Preferably in front of a fire/candlelight on a furry throw such as this.)

Travel safe.

And last, but certainly not least...

Merry Christmas Eve, my lovelies!
I hope you're spending this magical evening with the ones you love!

Recipe, schmecipe

My capacity for uploading high-quality camera photos is maxed,
and instead of trying to fix the problem in time for Monday's post,
I'm currently watching the Packers whoop it up on Detroit.

So for today's recipe,
I will share this one for Buffalo Chicken Mac 'n' Cheese.
We made it last weekend and thought it was pretty good.
A football viewing staple!

And here's a little cell phone pictorial of this last weekend in food...

Sweet potato gnocchi with sage butter + Petite syrah
(while watching Love Actually)
on Friday night.

Eggnog shakes from Kopp's on Saturday afternoon.
YUM.

Homemade cheese fondoue + a New Glarus craft beer sampler
(while watching Badgers vs. Marquette basketball)
on Saturday night.

And some comforting, hearty pork chops with cranberries, apples, stuffing, and blistered balsamic bacon beans on Sunday...
all enjoyed in front of a glowing trimmed tree.

Gotta love weekends at home!

cold weather + rosy cheeks

My morning routine as a mom and full-time NP has me craving short-cuts.
I'm thinking the "flushed cheek" look may be just the ticket.

With pink + crimson cheeks,
you need only apply mascara and chapstick to complete your daily look!
And that, my friends, is quick.

My favorite?
NARS blush in Mata Hari
{HERE}

(Save the shimmery pink + bronze for sunny summer days.)

What are your favorite, classy, quick make-up tricks?

Savory vegetable beef soup

Or, "Hamburger Soup" as we affectionately call it.
Another freezer meal that makes 2 batches!
Recipe {HERE}.

Simple remove from your freezer in the a.m.,
pop into a slow cooker with some beef broth,
and then come home to a hot "pot" of savory soup!

Pair with some good crusty bread and possibly a salad and you're good to go!
A cold weather must.
(And any recipe that makes 2 batches is a keeper for me!)
Bon apetit!

Overnight oats

Nothing says the day post-Valentine's Day like a fiber-filled breakfast.
;)

But seriously, this breakfast treat is one of my favorites!!
And it is just too darn easy, delicious, & nutritious not to share.

Overnight, Slow Cooker
Apple Cinnamon Steel-Cut Oatmeal

Original recipe {HERE}

What you need:

2 apples (peeled, cored, and chopped)
1 1/2 c skim milk
1 1/2 c water
1 c uncooked steel cut oats (of the Irish variety)
(Note:  Old fashioned rolled oats and/or quick-cooking oats will NOT work)
4 Tbsp brown sugar
1 (heaping) tsp cinnamon
2 Tbsp butter, cut into 6 pieces
1/4 tsp salt

Optional:  2 tsp ground flaxseed

(~ 6 Servings;
Recipe can be doubled, which is great for house guests and/or leftovers!)

Here's how you make it:

1.
Coat the inside of your crock pot dish with cooking spray.
(Skip this step and you will be sorry come cleanin' time.)

2.
Add all ingredients, stir, and cover.

3.
Cook on LOW for 7-9 hours, a.k.a. overnight.
And voila!  You will have the best-tasting oatmeal EVER when you wake up in the morning.

Yes, it is THAT easy.
Absolutely perfect for those pesky Monday mornings!
(Not to mention your house will smell of apples and cinnamon.  Holla! )

To garnish?
The options are endless.
I like dried cranberries and walnuts.
Sometimes fresh fruit - like bananas, blueberries, or peaches.
My husband simply likes a little more brown sugar and raisins.
Others may prefer maple syrup or a touch more butter/milk.
It's up to you!

You could even set up an "oatmeal bar" if making for house guests.
Fun!

Here is the extra bonus....
Package any leftovers into single servings in microwavable containers.

The next morning, just add a good splash of milk.
Nuke in the microwave for ~ 1:30 (with any toppings you desire).

Boom!  Breakfast ALL week.

Night at the Domes

A recap of our Friday evening excursion to Dining at the Domes.

Sounds fun, right?
I hadn't been to the Domes since I was a little kid.
(And they definitely didn't serve gourmet food and drinks.)

While there certainly were some good eats and an overall good time was had,
the whole event was definitely lacking on organization.
I felt like I was a guest at a Top Chef challenge,
waiting in ridiculously long lines for mediocre soups out of heating pans.

It was also a little dark and colder-than-expected inside,
but still pretty!

Summary:  Will I do it again next year?
Probably not.
But at least we got to sample some tasty grub (& beer for the huzz)!
And the money went to keeping the Domes blossoming all year long.
:)

Turkey, Kale & Brown Rice Soup

A healthy & delicious recipe to kick-off your 2012 resolutions!
(And to calm your winter colds.)
Adapted from the gorgeous Italian lady chef, Giada De Laurentiis.
Original recipe {HERE}.

Ingredients:
Olive oil
Salt & pepper, to taste
1/2 an onion (sweet, yellow, or Vidalia), chopped*
3 cloves garlic, chopped
3 medium carrots, peeled and chopped
1 red bell pepper, chopped
1 lb white-meat ground turkey
1 Tbsp Herbes de Provence**
1 bunch of kale, rinsed & chopped (get rid of woody stems)
1 15-oz can fire-roasted tomatoes, juice and all
1 can white cannellini beans (or Great Northern Beans), drained
1 cup cooked brown rice (or one microwaved packet via Trader Joe's!)
4 cups low-sodium chicken broth or stock

*you can substitute 5-6 medium shallots, chopped
**you can substitute Italian seasoning

What do to:

Heat olive oil in a Dutch oven.
Add chopped onions, garlic, carrots, & bell pepper.
Season with a little salt & pepper.
Saute until just soft.

Then, add in the ground turkey.
(Note:  I got mine from the deli counter...it was the same price, if not a little less, than the pre-packaged.  And I felt better knowing it was truly all white-meat and fresh.)
Season your meat with a touch more salt and pepper,
and your Herbes de Provence.

(I bought a shit ton of this "spice" concoction when in the South of France on our honeymoon and LOVE when recipes call for it!  It contains basil, fennel, lavender, marjoram, rosemary, sage, & thyme.  It is insanely fragrant and tasty...good on meat & breads and in salad dressings & soups - you name it.  I've seen it reasonably priced at Home Goods.  You could, however, substitute, Italian seasoning.)
Saute the turkey until it is mostly browned.

Meanwhile, rinse, de-stem, and coarsely chop your kale.
Glorious kale!  Dark leafy green goodness!
(Perhaps my huzz will be happy to see it in another application than juice?)
Add it to the pot, and sprinkle with a little more salt and pepper.
Key to tasty soups? Season as you go, peeps.  Season as you go.
And don't freak it out.  It may look like Mt. Saint Kale, but it will cook down.  A LOT.
And just think of how good all of it is for you!

Add the can of fire-roasted tomatoes (with their juice).
If you can't find fire-roasted, though they are always in my grocery store, you can use plain diced tomatoes.  I just think the fire-roasted adds an extra layer of smoky deliciousness.

Also, add the can of beans (drained and rinsed).
Note: White beans were not in G's recipe, but they add extra protein & fiber.
And really, in any Italian soup with greens, they should be there.
Come on, foodies, you know I'm right.

Toss in the cooked brown rice and stir everything together.

At this point, be sure to taste again,
and add a little more salt and pepper if you think it needs it!

Add the 4 cups of chicken stock/broth.

Bring to slight broil, then simmer for 15-20 minutes.
By the time you have cleaned your kitchen,
you are now ready to serve!

Giada adds fresh chopped parsley and grated Parm to her bowl of soup.
While you can never go wrong with fresh herbs and cheese, in my opinion,
these additions are optional.
I did not have either on hand and thought it was DELICIOUS without.
(And even tastier come Day 2!)

P.S.  I made a half-batch of these yummy corn muffins
(with garlic & sundried tomatoes!) as an accompaniment to the soup.
Shout out to 50 cent Jiffy corn muffin mix!

Bon apetit!
And sayonara winter doldrums!

P.P.S.  You could make this soup vegetarian/vegan by omitting the ground turkey,
substituting vegetable broth or stock, & possibly adding another can of beans.
:)
