Blueberry thrill

Blueberry Walnut Bars.
One word: YUM.

Alex paused the series finale of Smallville while eating.
(If you know Alex, this is major.)

Me:  What?
Alex: WOW.
Me: Is this recipe a keeper?
Alex:  Big time.

Done!
Recipe follows:
  • 2/3 c ground walnuts
  • 1/2 c graham cracker crumbs
  • 2 Tbsp plus 1/3 c sugar, divided
  • 1/3 c old-fashioned rolled oats
  • 3 Tbsp melted butter
  • 1 pkg (8 oz.) reduced-fat cream cheese
  • 1 Tbsp orange juice
  • 1/2 tsp vanilla extract
  • 1/2 c reduced-fat whipped topping
  • 2 Tbsp blueberry preserves
  • 1 1/2 c fresh blueberries

Combine the walnuts, cracker crumbs, 2 Tbsp sugar, oats, and butter.
Press onto the bottom of an 8-in square baking dish coated with cooking spray.
Bake at 350 for 9-11 minutes until set and edges are lightly browned.
Cool on a wire rack.
(P.S. Do any of you actually have a wire rack?  I do not and have fared well in my baking endeavors thus far.  Just sayin'.)

In a large bowl, beat cream cheese and remaining sugar until smooth.
Beat in orange juice and vanilla.
Fold in whipped topping.
Spread over crust.

In a microwave safe bowl,
beat preserves on high for 15-20 seconds or until warmed.
Gently stir in fresh blueberries.
Spoon over filling.
Refrigerate until serving...Enjoy!

Blueberries, walnuts, and oats...those are healthy things, right?
With 167 calories per square,
I think this is a dessert worth treating yourself to!
