Autumn Chopped Salad

I know it's not a traditional Thanksgiving side,
but sometimes it is nice to have something light and refreshing
to go along with all the other calorie-ladden goodness!

Here is my take on {THIS} fall salad...


Ingredients:
2-3 heads of Romaine lettuce, chopped
1/2 green apple, chopped
1/4 red onion, thinly sliced
4-5 beets, roasted and chopped (I got mine pre-cooked at Trader Joe's)
Handful edamame, cooked and shelled
Handful dried cranberries
Handful feta cheese crumbles
Handful toasted pumpkin seeds
Poppyseed dressing
Balsamic vinaigrette

(Next time, I'm adding crumbled crispy bacon!)

Place everything on a platter.
Dress at the last moment.

Simple and delicious.
Enjoy!

(We sure did.)
