Ingredients
1 lb lean ground beef or turkey
1/2 onion, chopped
1/2 green pepper, chopped
1 jar enchilada sauce (10-12 oz.)
1 can tomato sauce (8 oz.)
1 can refrigerator biscuits (16 oz.)
~ 1-1/2 c shredded lite Mexican cheese
Optional:
Black beans
Corn
Toppings:
Lite sour cream
Green onions
Directions
Preheat oven to 350 degrees.
Preheat oven to 350 degrees.
Meanwhile, saute onion and green pepper in a teaspoon of olive oil.
Add meat and cook through.
Season with salt and pepper to taste.
Drain meat.
Add rinsed beans and/or corn, if so desired.
Add sauces and stir to combine.
Open biscuit dough and cut each biscuit into 4 pieces.
Add to mixture and stir to combine.
Place entire contents into an ~ 8"x11" casserole dish.
Bake at 350 for 30 minutes.
(Test with toothpick to see if biscuits are done. Bake additional ~5 minutes if needed!)
Add shredded cheese and cook for 10 more minutes.
Remove from oven and let stand/set for 5 minutes.
Serve with sour cream and green onions!
Pretty easy...and tasty! And even better leftovers.
