Mint chocolate chip cookies

Chocolate + Mint = One of my favorite combinations!


And this is one easy cookie recipe.

What you need:

1 cup Crisco (or one stick)
1 cup packed brown sugar
1 pkg (3.9 oz) chocolate fudge pudding mix
2 whole eggs
1 tsp baking soda
2 c flour
1 bag dark chocolate and mint chips
(you can also substitute chopped Andes candies pieces)

Directions:

Beat Crisco and brown sugar in a large bowl with a mixer until light and fluffy.
Add dry pudding mix, beat until well blended.
Add eggs and baking soda, mix well, scraping sides of bowl as needed.
Gradually add flour, beating after each addition until blended.
Stir in chocolate and mint chips.
Drop dough 2 inches apart onto ungreased baking sheets.
Top with colored sanding sugar, if so desired.
(We made ours for the Rose Bowl, so red sprinkles were required!)
Bake at 350 for 10-12 minutes until edges are lightly browned.
Cool slightly and enjoy!

Especially tasty with a hot toddy...namely one of my Tom & Jerry's.


Note:  This dough freezes well for quick baking anytime you get a craving!
