It's that glorious time of year when tomatoes, zucchini, and summer squash are in abundance. (Read: They are essentially giving that shit away at farmers' markets and grocery stores!)
This simple side dish is husband-approved (I credit the cheese!)
and mom-approved (due to the aforementioned veggies!).

There are no rules...just layer away at will!
(I used dried Herbes de Provence + a medley of fresh herbs.
